Machine-harvested to enhance colour extraction, this dry rosé was fermented with a yeast strain chosen to emphasise the fruity esters of Pinot Grigio. It remained on skins for three days to develop texture and a tactile mouthfeel. To add a subtle layer of complexity, 1.5% Vermentino lees were incorporated for seven weeks, enriching the wine’s mouthfeel while preserving its crisp, refreshing character and bright fruit expression.
Tasting Notes
This rosé opens with an elegant bouquet of jasmine and honeysuckle, layered gently over ripe apricot and soft rose petals while subtle notes of strawberries and cream lend a luxurious, inviting sweetness. Fresh aromatics of lemon myrtle and mandarin peel lift the nose, adding a bright, zesty dimension. On the palate, a delicate savoury undertone runs beneath vibrant notes of dried blood orange, carried by a medium length and well-integrated acidity. Refreshing and composed, this rosé is ideal alongside fresh seafood or spicy dishes.
