Machine-harvested to enhance colour extraction, this dry rosé was fermented with a yeast strain chosen to emphasize the fruity esters of Pinot Grigio. It remained on skins for three days to develop texture and a tactile mouthfeel. To add a subtle layer of complexity, 1.5% Vermentino lees were incorporated for seven weeks, enriching the wine’s mouthfeel while preserving its crisp, refreshing character and bright fruit expression.

Tasting Notes

On the nose this dry rosé greets you with a symphony of jasmine, honeysuckle, and apricot, accented by rose petals and oyster shell. A touch of strawberry and cream adds a luscious sweetness, while lemon myrtle and mandarin peel provide a zesty freshness. A wine with a fine tactile structure and a delicate, subtle savory quality, it offers dried blood orange notes with medium length and balanced acidity. Perfectly paired with fresh seafood or spicy dishes, it evokes a refreshing yet refined textured experience.
