When we look at Vermentino the aim is to balance the racy acidity with an off-dry palate. It represents the ability of the variety with the freshness being the soul that expresses a summer and beach vibrancy. The focus during picking Vermentino is to represent that crunchy acidity and the subtle flavour expression of this grape varietal. This Vermentino flatters with oyster, saline nuances in food and it embraces Asian cuisine.

This modern style Vermentino presents a pale straw colour that is bright and clear. On the nose aromas of ripe red apple, hints of rockmelon and key lime are complemented by a touch of Jasmine. The palate expresses juicy fruit with flavours of white pear and grapefruit. Well-balanced acidity, complemented by a touch of sweetness, contributes to a structured mid-palate distinctive to Altair Estate. Its refreshing character sparkles on the finish, inviting another sip. This light, crisp and fruity wine is perfect for enjoying on its own or paired perfectly with fresh oysters by the sea.

Grown under mottled light to enhance tropical notes, the grapes were harvested with vibrant acidity. After crushing, a 50-hour skin maceration built structure, complexity and spice-driven depth. Fermentation occurred in stainless steel, with 66% undergoing secondary fermentation for added texture and mouthfeel. The wine then matured for 14 months in 85% French and 15% Hungarian oak, enhancing structure and aging potential while preserving its expressive, layered character.

The nose bursts with spicy-sweet clove, guava and tropical fruits, with a violet floral intensity and ripe peaches complemented by strong natural acidity. The palate is soft and textural, with a medium body and long, refreshing acidity. Gentle oak toast lingers on the finish, with undertones of lemon myrtle and ripe lime adding zest, while a framing of sweet oak adds complexity and depth. Best paired with spicy foods or creamy pasta for a harmonious pairing, this wine is a balance of freshness and complexity.

Vintage 2022

From harvest, 65% of the Cabernet Sauvignon underwent 56 days of skin maceration to enhance structure, colour and spice. A selected yeast strain was used to amplify palate volume, structure and terroir expression. The wine matured for six months in French oak, with a small addition of American granular oak at the end to boost spice and a robust, savory mouthfeel.
Final blend: 72.8% Cabernet Sauvignon, 27.2% Merlot.

Our Cabernet Sauvignon Merlot is a bold yet refined expression of its varietal blend. Rum and raisin meet the nose, blending with anise and bay leaf. The dark, wild berry aromas and hints of cigar box provide depth and intrigue while the gravelly tannins offer a structure that softens as the palate unfolds, with rum spice lingering on the finish. The wine is softer than the nose suggests, with supple tannins creating an approachable wine. Subtle black licorice and peppercorns complement the ripe plum and blackcurrant flavours.

Sangiovese, the famously native grape varietal to Tuscany responsible for some of the most well-known wines, such as Chianti. Marking the latest picking date for this grape variety for this vintage, it benefited from a moderate extended ripening period. With this wine we want to enhance strong expression of Sangiovese varietal characters. A stylistic choice was made to create a softer, more concentrated fruit-driven wine. Slightly chilled in an oversized glass, that collects aromas but allows the wine to open, which is how we recommend drinking it.

This estate-grown Sangiovese displays a pale ruby colour. The concentrated aromas of sweet red and dark fruits transition smoothly from nose to palate, with ripe Amarena cherries, raspberries and strawberries taking centre focus. A subtle spice undertone of cardamom, white pepper and coriander seeds adds complexity to the back palate. The wine’s high concentration unfolds from the front to mid-palate, leading into firm yet fine tannins.

Merlot – Made from the 181 Bordeaux clone, our merlot was fermented with a yeast strain selected for modern, aromatic red wines with a supple palate. The use of svinatura (draining) ensured only the purest free-run wine was utilised. It then matured for 27 months in 90% neutral American oak and 10% second-use French oak, enhancing its structure, smooth texture and refined expression of fruit and spice.

On the nose, dark raspberries, cranberries, and chocolate oranges invite you in, mingling with coffee bean oak and red licorice. The scent is enhanced by rosemary and a minty herbal mix. A hint of spice emerges on the mid-palate, with flavours of black mulberry and cardamom rounding out the experience. The wine presents a long finish that melts away with freshness and a subtle, chalky tannin texture.

For vintage 2022, it provided a fantastic vintage. Margaret River’s moderate Mediterranean climate and cool maritime influence gives strong seasonal consistency between vintages and the ability to achieve perfectly ripe fruit. This year the Malbec fruit ripened under a dense canopy, maintaining its purity while allowing rich flavours to develop over a prolonged period. A full-bodied wine that has all the features to be enjoyed with steak, a chocolate dessert or on a cold day in front of a fireplace.

This Malbec is vibrant and expresses its intensity while it’s still in its youth.
On the nose, it’s perfumed with floral notes of roses and violets, accompanied by generous aromas of mulberry jam and Turkish delight, layered with subtle black peppercorns and dried tea leaves.
On the palate it’s rich and lush with juicy Satsuma plum, anise spice, and ripe raspberry, supported by firm tannins and offering a long finish.
